Pasta egg pie Ingredients 200 gram of pasta (3-colour) 1 carrot 200 gram of mushrooms 100 gram of green peas 1 onion 8 eggs Italian herbs (basil, thyme, oregano, parsley) Preparation • Cut the carrot in small pieces and cook the carrot and the green peas in a pan on the stove for 20 minutes. • Cook the pasta in a pan as per the instruction on the pack. • Cut the mushrooms and onion in slices. • Break the 8 eggs in a bowl and add the Italian herbs. • Mix the vegetables and the pasta with the eggs. • Put the mixture in an oven tray and bake at 200 degrees Celsius for 30 minutes. Health benefits *The carbohydrates in pasta provide glucose, the crucial fuel for the brain and muscles. *Carrots are rich in beta-carotene, which is converted into vitamin A in the liver. INGREDIENTS: 4 bone-in, skin-on chicken thighs 1/2 teaspoon dried basil 1/2 teaspoon dried oregano 1/4 teaspoon dried rosemary Kosher salt and freshly ground black pepper, to taste 2 tablespoons unsalted butter 2 pounds baby red potatoes, quartered 2 tablespoons olive oil 4 cloves garlic, minced 1/2 teaspoon dried thyme 1 cup freshly grated Parmesan 2 tablespoons chopped fresh parsley leaves DIRECTIONS: Season chicken with basil, oregano, rosemary, salt and pepper, to taste. Melt butter in a large skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; drain excess fat and set chicken aside. Place potatoes into a 6-qt slow cooker. Stir in olive oil, garlic and thyme; season with salt and pepper, to taste. Add chicken to the slow cooker in an even layer. Cover and cook on low heat for 7-8 hours or high for 3-4 hours, or until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F. Serve immediately, sprinkled with Parmesan and garnished with parsley, if desired. Brussel Sprouts INGREDIENTS 1 pound brussels sprouts, rinsed, ends trimmed, rough outer leaves of larger sprouts removed 1 Tbsp minced garlic (about 3 cloves) 1 teaspoon lemon juice 2 Tbsp olive oil Salt Freshly ground black pepper 1/4 cup freshly grated Parmesan cheese (optional) Directions Preheat oven to 350°F. Toss sprouts with garlic, lemon juice, olive oil, salt, spread onto a roasting pan: Place brussels sprouts in a large bowl. Toss with garlic and lemon juice. Toss with olive oil so that the sprouts are well coated. Spread the brussels sprouts out in a large cast iron frying pan or roasting pan in a single layer with plenty of space between the sprouts. Sprinkle generously with salt (at least half a teaspoon) and a few turns of black pepper. Roast in oven: Put brussels sprouts in oven on top rack, roast for 30 minutes, stirring the sprouts about halfway through the cooking. Adjust the timing depending on the size of the sprouts and your particular oven. The sprouts should be nicely browned, some of the outside leaves crunchy, the interior should be cooked through. If the sprouts look like they are getting too browned (they should be well browned, not burnt), move them to a lower rack or lower the heat. If after 30 minutes the sprouts aren't browned enough, put them under the broiler (or increase the heat to 500°F) for 5 minutes. Sprinkle with Parmesan: Toss with Parmesan (if using) and add more salt to taste to serve. 1 C uncooked rice Oil 1 Small bag frozen peas 2 Celery Stalks 1 Can Diced Tomatos Spinach (to taste) Season to taste with Basil Ground Cumin Oregano Paprika Thyme Salt Optional: 1 Onion 2 cloves Garlic 1. Make rice per package instructions. 2. Coat the bottom of a frying pan with oil (on medium heat) add Celery and (if using them) onion and garlic. Sautee until soft. 3. Add cooked rice to the frying pan. Add seasonings to taste. Cook for a few minutes, mixing periodically so rice doesn't stick to your pan.
