Food Allergies & Intolerances: How to protect yourself and boost your immune system http://drchristianson.com/blog Are you stuck with food allergies long term? What is the difference between and allergy and an intolerance? A food allergy is an abnormal response to food originating in the immune system such as peanuts or shellfish. A food intolerance is unrelated to the immune system such as milk intolerance, which is not being able to digest it properly. Allergies and intolerances are stressful so let's talk about the allergies we can affect. For starters this video is not discussing changing allergies such as peanuts, shellfish, or celiac. These allergies are long term. However I move on, the more exposure you have earlier in life to foods that commonly produced allergic reactions such as peanuts, dairy and shellfish the less likely there will be severe allergic reactions later in life. Now to the allergies we can help. This first step is finding out what foods are affecting you. Some may come quickly, other slowly creep up over a period of time. If a reaction is consistent over multiple encounters than that is grounds to remove that food from your diet. Avoidance and reintroductive diets can be good, however when you restrict your diet, you restrict your digestive capacity. The fewer foods you do eat, the fewer foods you can digest. Here's a few tests that assist you in pinpointing real allergic reactions. There are blood tests, skin tests, and electrodermal tests. The skin tests are reasonably good for airborne allergies but aren't reliable for other types. The blood test are good but they are different lab to lab. Once results are returned through these different allergy tests you should give yourself 3 months not consuming these foods. This will help you repair your intestinal tract. Fermented foods during this time can really boost your digestive system as well as glutamine and glucosamine (NAG). After the 3 months it is a good idea to recheck. The Coca Pulse Test. Can you do your own food intolerance testing? Yes, you can. In the 1950s, Dr. Arthur Coca identified that his wife’s heart rate would increase if she ate a food to which her body reacted. This is not a science, but if correlated with certain symptoms will give you some important knowledge; plus it is still effective and low cost method if you'd like to self-diagnose. Special notes: ==Heart medications such as beta blockers may impact the results. ==Smoking and Alcolhol (alcohol even the next day) dramatically impacts the results of this test, so if you are a smoker, you must stop smoking prior to using this method or your results will not be conclusive. ==In the initial test, you will take your pulse 14 times a day for a 3 day period. ==When you count your pulse, do it for the full 60 seconds (not just 15 seconds and multiply by 4.) ==Take pulse when sitting down, except for first pulse taken while still lying down in bed. The Initial Test: *Take your pulse during these times for three days: -prior to getting out of bed -before each meal -three times after each meal at 30 mins, 60 mins, and 90 mins after finishing -just before going to bed Interpreting Results Your morning pulse should be the lowest of the day. Unless you are allergic or reactive to something on which you are sleeping. (Pillow, fabric softener, sheets, carpet, dust mites, pet that sleeps with you, etc.) If your pulse goes up noticeably after you get up from bed, you could be reacting to something like your toothpaste, shaving lotion, shampoo, or make-up. Determine your highest and lowest pulse rates over the three days. Your highest “non reactive” pulse rate should be no more than 15 beats above your lowest point. Anything above that point is questionable and mostly likely an indication that you are having a reaction. So, if your lowest point is 60, then anything above 75 is a red flag. Bananas What has often been referred to as earth’s “perfect food” may not be so perfect if you have weed allergies. The Mother Nature Network also notes that some fruits can adversely affect weed pollen-sensitive people, especially those who suffer from ragweed allergies. [Soundbite] Naengmyeon Restaurant Owner : "Some customers order Neangmyeon without cucumbers, because they don’t like the fragrance that cucumber gives off." With a growing number of consumers developing allergies to certain ingredients, the food industry is taking relevant measures such as posting notice signs. This pizza parlor indicates potentially allergic components not only on the menu but also on delivery receipts. There are now bakeries that don't use milk or eggs at all. [Soundbite] Sin Seong-cheol(Bakery Owner) : "We use soy milk instead of regular milk. And for children who can't consume soy milk, we just use water for the bread dough." But these measures are only the beginning. Since May, it became mandatory for franchised restaurants to disclose the composition of their raw ingredients, but the rule has not been properly observed. Experts warn the public to be cautious of allergens, substances that can cause allergic reaction to the body, as allergies can sometimes be life-threatening. Allergy causes can vary from person-to-person. According to experts, common allergens are food, molds, insect bites, pollen, and drugs. Allergies are 'abnormal' responses of the body triggered by the immune system. Normally, the immune system fends off foreign substances known as antigens. As a combat mechanism, the body produces antibodies and other chemicals. However, during an allergic reaction, the body inappropriately reacts, releasing chemicals such as histamine to attack protein. When this occurs, common symptoms of allergies occur. Allergic symptoms include rashes, asthma, reddening of the eyes, among others. According to experts, most allergies are not serious and can be treated with various over the counter or prescription drugs. However, there can be times when allergies can result to severe illness, demanding immediate medical attention. If not immediately treated, it can result to death. Anaphylaxis is the life-threatening allergic reaction which causes a sudden release of chemicals by the body's immune system. When this occurs, chemicals cause the body to undergo shock, causing a sudden drop in the blood pressure and difficulty breathing. When undergoing anaphylaxis, experts said a patient must be immediately rushed to the hospital emergency room and be injected by epinephrine. This holiday season, experts warn the public to be extra cautious of food allergens as some may be present in dishes served during gatherings. According to infectious disease expert Dr. Rey Salinel, some allergens can be 'hidden' in cooked dishes. "Minsan nga hindi mo mamamalayan,pero nag-manifest sayo [ang] allergy. Ibig sabihin nakakakuha ka (Sometimes you won’t notice the food allergen until the allergic reaction manifests in your body)," he said. Common food allergens include seafood, peanuts, and eggs. Experts also added, if food is not handled properly, food allergens can be potentially cross contaminated. Cross contamination can occur if proteins from one food directly make contact with another, or indirectly transfer via utensils or hands. Cleaners such as kitchen sponges can also act as a contamination agent if microscopic allergens are transferred to plates. If plates are not washed properly, the allergens can contaminate food during next use. However, US-based National Center for Biotechnology Information clarified, allergic reactions from cross contamination depends on the amount of exposure, frequency, and the individual’s threshold dose. According to experts, ample knowledge of your specific allergen is the first step towards avoiding allergic reaction. Once you have identified what substances you are allergic to, as much as possible, avoid these. Also, when preparing food this holiday season, experts said it would help to properly label food in order to avoid unwanted allergic reactions. Further, preparing and serving food that can possibly cause allergies separately can decrease chances of contamination. Using clean utensils specifically designated for only a single food type is also recommended by experts.

Sheetz, RN, MPH, NEA-BC The speakers will share evidence based and best practice guidance and strategies, consistent with the CDC guidelines for making school settings safe for students with life-threatening allergies (LTAs). They will discuss the (a) importance of LTA awareness and communication among parents, students, staff and providers when a student with an LTA attends school, (b) issue of divisiveness when this communication is lacking, (c) critical role of the school nurse in managing the program, (d) psycho/social issues associated with food allergies, including bullying, and (e) importance of label reading, cross contact, and hidden ingredients. A strong focus will be on the recognition of allergic reactions and anaphylaxis, as well as the administration of epinephrine, and referral to emergency services. Massachusetts (MA) has one of the highest LTA rates in the country, as well as a mandated reporting system when epinephrine is administered in the school setting. Speakers will present data on such issues as type of allergen, who administered the, epinephrine, the school location where symptoms first occurred and the lessons learned. In addition they will give an overview of the cost benefits study of having a qualified full-time school nurse in the building. At the end of the webinar, the learner will be able to: • Understand important principles of food allergy and anaphylaxis management in the school setting. • Understand the necessity for school wide awareness and education. • Apply nationally relevant lessons learned from Massachusetts’s experience with the management of life threatening allergies (LTAs) over the past 20 years.

If you’re allergic to peanuts, tree nuts, like walnuts, may bother you too. Milk and Dairy Foods Milk is one of the most common food allergy trigger for kids. The good news -- most outgrow it. In the meantime, infants may need hypoallergenic or soy formula.If you’re breastfeeding, you may need to avoid drinking milk too. Look at the label on packaged foods. Even things like tuna can have milk protein in it. Sometimes milk is listed as the ingredient casein. Eggs These are another common food allergy trigger for kids. While many outgrow this allergy, watch out for eggs in noodles, mayonnaise, and baked goods. They can also be in some unlikely places like the foam topping on drinks or the egg wash on pretzels. Eggs are also used to make the flu vaccine, so check with your doctor before getting it. Shellfish Surprise! You can get a sudden seafood allergy as an adult. If you do, sorry seafood lovers, it’ll probably stick with you for life. Shrimp, crab, crawfish, and lobster -- these guys can cause serious reactions. Clams, mussels, scallops, escargot, octopuses, and squid can cause reactions, too. If you’re allergic, avoid all shellfish. Tree Nuts It can seem like nuts are everywhere. They can even be in lotions made from tree nut oils, like shea oil. Nuts must be listed on packaged foods, but they're harder to avoid in restaurants and bakeries. If you’re allergic, watch out for walnuts, almonds, pecans, hazelnuts, cashews, pistachios, Brazil nuts, and pine nuts. Nutmeg, water chestnuts, and sunflower seeds aren't nuts and should be OK. Fish Fresh salmon, tuna, or halibut can cause severe allergies. If you’re allergic to one type of fish, you may react to others, too. Be careful if you love Thai and Chinese food. Many ethnic restaurants flavor dishes with fish sauce. Also beware of Caesar dressing and Worcestershire sauce. They have anchovies in them. Soy Breads, cookies, canned soups, processed meats, and snack foods all can have soy in them. If you’re allergic, read food labels carefully so you can steer clear. Other foods to avoid include edamame, tofu, soy milk, miso, and soy sauce. Babies and children are more likely to have a soy allergy than adults. Wheat From bread to beer, salad dressing to deli meats, wheat can hide in a lot of foods. Why? Wheat proteins help some processed food stick together and give it texture. If you’re allergic to wheat, other grains, like barley, oats, rye, corn, and rice are usually safe. But you may want to avoid bulgur, couscous, and farina. It's possible to have a wheat allergy but be OK to eat gluten. Gluten Sensitivity? Intolerance? If you’re gluten-sensitive, that’s different from an allergy. When you think of an allergy, most people think of a severe reaction with shortness of breath, rash and swelling. That extreme reaction is relatively rare. A more common situation is a low grade food allergy with a more subtle, yet over the years, a very destructive reaction that stimulates damaging changes in the body. Many recent studies are showing that allergies to foods have a direct link to gaining weight, obesity and disease. A recent research article in the New England Journal of Medicine listed 55 diseases that can be traced back to a food allergy. One of those diseases is obesity and weight gain. Undetected allergies will cause an inflammatory reaction when eaten. The problem is the reaction is often delayed 24-48 hours after exposure, so it is difficult to trace vague feelings like fatigue, constipation or softer stools, bloating, gas and mood changes. So the problem continues to grow out of control. The long term effect of out of control inflammation in the body leads a multitude of disease and illness including weight gain and obesity, arthritis and pain, and irritable bowel syndrome to name a few. Most people will eat foods they are allergic to several times during the day and eventually the inflammation will spread throughout the body and create an environment for weight gain and chronic disease. The gut wall gets swollen and inflamed and has a harder time dealing with its job of defending against invaders like other allergens and infection. They also have a difficult time absorbing nutrients from food. This compounds the problem. Gluten is the number one hidden food allergy. It is found in wheat, barley, rye, oats, kamut and spelt. Celiac disease is a full blown allergic reaction to gluten where the body attacks the small intestine. It is present in about 1 % of the population. About 30% of the population has non-celiac gluten intolerance where the immune system attacks the gluten. This reaction is much more subtle, but can lead to long term consequences if not uncovered and addressed. The other top undetected food allergies are dairy, corn, eggs, soy, nuts nightshades (tomatoes, bell peppers, potatoes and eggplant), citrus and yeast (baker's, brewer's and fermented products like vinegar). Left undetected they lead to similar problems. Identifying and treating these food allergies is the first step in combating the effects it has on weight gain, disease and inflammation. Most physicians don't address this crucial issue when working up a patient with fatigue, weight gain or pain. A simple blood test can help identify hidden food allergies. All testing has its limitations and needs to be interpreted by a provider trained in dealing with food allergies and there long term effect on health and healing. In our clinic we deal with an array of disease and disorder in the body. From my patients with chronic pains, body degeneration and arthritis to the athlete with decreased performance and nagging injuries our goal is to treat there problem from the inside out. We have found that a quick fix cover-up or too many prescription medications that do not address the root cause of the problem does a disservice to the patients we care about. Medicine is evolving and we need to stay on top of the current research to treat and prevent the diseases that rot and plaque our bodies. I don't see much sediment with water fasting for 3 days at a time here and there, but I do see a lot of sediment with dry fasting once a week for 36 hours. Is dry fasting for 36 hours once per week healthy? I also don't understand why I get sediment with dry fasting, but not water fasting? He has a MRI and CAT scan to make sure the infection hasn't reached his skull bone. But don't take your allergies lightly − coping with food allergies is a full-time job. Step 1: Read food labels Read food labels to avoid allergy-inducing foods. Companies are not required by law to report every ingredient, so do all you can to find out everything you can. Tip Food with hydrolyzed protein can contain dairy products. Step 2: Wear medical bracelet Wear a medical bracelet. If you are unable to speak in the time it takes for your allergic reaction to begin shutting your system down, companions and strangers can find help and provide information. Tip No drug can cure a food allergy, but you can save yourself when an attack starts by using an EpiPen -- emergency epinephrine delivery device. But be sure to get to the hospital within 20 minutes after use. Step 3: Check for sulfites Research sulfites and be sure to ask restaurants whether menu items include sulfites, peanut products, or other allergens. Step 4: Notify primary people Notify primary people in your life or your children's lives so they know what to do in case of life-threatening contact. Write and distribute an action plan to schools and friends. Step 5: Follow diet Follow your special diet. Be consistent and don't waver, regardless of how long it's been since you suffered an attack. Step 6: Use allergy-free cookbook Buy and use an allergy-free cookbook. Find alternative foods that can become a staple of your diet. Balance your foods nutritionally while you're eliminating allergens. Step 7: Wash dishes and utensils Wash dishes, utensils, pots, and pans thoroughly to ensure you don't accidentally ingest something. Educate yourself on cross contamination. Did You Know? The National Institutes of Health reported in 2007 that over 30,000 anaphylactic attacks occur annually, resulting in 100 to 200 deaths in the U.S.

Sarah McKenzie knows the deadly potential of food allergies all too well. Her young son, Gunner, has a peanut allergy, and while the family is attentive, the smallest mistake can endanger him. But at Notre Dame, Professor Basar Bilgicer hopes to make allergies, and the accompanying anxiety and trauma, a thing of the past. He has created an inhibitor which will prevent allergic responses entirely by blocking them at a molecular level. For the Food and Allergy Research and Education organization, Bilgicer’s discovery is, in and of itself, fantastic news. But what’s better is that Bilgicer’s method is a platform that could be applied to many other different allergens including penicillin, wheat, dairy, eggs, etc. The potential is exciting, even life-changing, but the timeline is long. By collaborating with physicians and allergy specialists, like Dr. Wayne Shreffler from MassGeneral Hospital and Dr. Manish Butte at Stanford Medical School, he is evaluating the potential of his technology to translate to the clinic. But Bilgicer underscores that a typical timeline for therapeutics is eight to ten years from lab to market. And that’s without any hiccups. While diagnostic technology may move a little faster, it still won’t be available to the public for years yet. But Bilgicer believes strongly in his products and is determined to move them along. Allergens like pollen are nothing more than foreign plant antigens. The stimulus for sneezing gets triggered when allergens first enter the nasal tissue. Pollen allergens encounter the plasma cells in the nose, which respond by producing antibodies. These antibodies attach to mast cells, which are white blood cells containing the chemical histamine. As more antibodies are produced, they cause the mast cells to release histamine. Histamine then produces allergy symptoms. A stuffy and runny nose, sneezing and watery eyes help to remove the invading pollen. Medications called antihistamines may be used to help alleviate severe allergy symptoms. What Is an Allergy? It's what happens when your immune system reacts to something that’s usually harmless. Those triggers, which doctors call "allergens," can include pollen, mold, and animal dander, certain foods, or things that irritate your skin. Allergies are very common. At least 1 in 5 Americans has one. What Happens During an Allergic Reaction? It starts when you come into contact with a trigger that you inhale, swallow, or get on your skin. In response, your body starts to make a protein called IgE, which grabs onto the allergen. Then histamine and other chemicals get released into the blood. That causes the symptoms you notice. What Are the Symptoms? Your symptoms depend on how you’re exposed -- through the air, your skin, food, or through an insect sting. If you’ve got a nasal or skin allergy, common symptoms include: Itchy, watery eyes Sneezing Itchy, runny nose Rashes Feeling tired or ill Hives (a rash with raised red patches) Food allergies can also cause stomach cramps, vomiting, and diarrhea. If an insect sting was the trigger, you’ll have swelling, redness, and pain where it stung you. Symptoms can range from mild to severe. Most go away shortly after the exposure stops. Mild ones may be almost unnoticeable. You might just feel a little “off.” Moderate symptoms can make you feel ill, as if you’ve got a cold or even the flu. Severe allergic reactions are extreme. Is It Anaphylaxis? The most severe allergic reaction is called anaphylaxis. It affects your whole body. Symptoms can include: Hives and itching all over Wheezing or shortness of breath Hoarseness or tightness in the throat Tingling in the hands, feet, lips, or scalp Anaphylaxis is life-threatening, so call 911 right away. If you have an epinephrine auto-injector, use it and repeat after 5 to 15 minutes if your symptoms haven’t improved. You’ll still need medical care right after you give yourself the shots, even if your symptoms seem to stop, because a delayed reaction could still happen. Allergies, also known as allergic diseases, are a number of conditions caused by hypersensitivity of the immune system to something in the environment that usually causes little or no problem in most people. These diseases include hay fever, food allergies, atopic dermatitis, allergic asthma, and anaphylaxis. Symptoms may include red eyes, an itchy rash, sneezing, a runny nose, shortness of breath, or swelling. Food intolerances and food poisoning are separate conditions. Common allergens include pollen and certain food. Metals and other substances may also cause problems. Food, insect stings, and medications are common causes of severe reactions. Their development is due to both genetic and environmental factors. The underlying mechanism involves immunoglobulin E antibodies (IgE), part of the body's immune system, binding to an allergen and then to a receptor on mast cells or basophils where it triggers the release of inflammatory chemicals such as histamine. Diagnosis is typically based on a person's medical history. Further testing of the skin or blood may be useful in certain cases. Positive tests, however, may not mean there is a significant allergy to the substance in question. Early exposure to potential allergens may be protective. Treatments for allergies include avoiding known allergens and the use of medications such as steroids and antihistamines. In severe reactions injectable adrenaline (epinephrine) is recommended. Allergen immunotherapy, which gradually exposes people to larger and larger amounts of allergen, is useful for some types of allergies such as hay fever and reactions to insect bites. Its use in food allergies is unclear. Allergies are common. In the developed world, about 20% of people are affected by allergic rhinitis, about 6% of people have at least one food allergy, and about 20% have atopic dermatitis at some point in time. Depending on the country about 1–18% of people have asthma. Anaphylaxis occurs in between 0.05–2% of people. Rates of many allergic diseases appear to be increasing. The word "allergy" was first used by Clemens von Pirquet in 1906.
