Stevia is touted as a healthy sweetener choice, a natural sweetener which is ideal to use in low carb, keto, ketogenic or banting diets or lifestyles. But the question I pose to you is: ARE YOU REALLY EATING STEVIA??! I had been using a product called Stevia in the Raw. I picked up this sweetener from the supermarket. The name of this product, Stevia in the Raw, suggests it is natural and simply raw stevia. There is also wording on the packet/bag stating that it is naturally sourced. This led me (and I am sure many others who have bought this sweetener) to believe it is pure Stevia. Now I am a HUGE proponent of reading the labels on EVERYTHING I buy. In fact, I have been asked in Costco before “what are you looking at / what are you looking for” because I pick up every product and read the label, ingredients and macros. Every single person should be doing this! However, for some reason, I did not do this with this product Stevia in the Raw. And this is what I found: This product contains Steviol Glycoside / Steviol Glycosides which is/are the chemical compounds responsible for the sweet taste of the leaves of the South American plant Stevia rebaudiana (Asteraceae), and the main ingredients (or precursors) of many sweeteners marketed under the generic name stevia and several trade names. So far so good. There is, however, another ingredient included in this bag called Maltodextrin. Maltodextrin is a white powder made from corn, rice, potato starch, or wheat. Even though it comes from plants, it’s highly processed. To make it, first the starches are cooked, and then acids or enzymes are added to break it down further. The resulting white powder is water-soluble and has a neutral taste. Maltodextrin is generally used as a thickener or filler to increase the volume of a processed food. This is why it is used in Stevia in the Raw. They state on their website that it is added to make the product comparable with table sugar in terms of sweetness and volume. So one teaspoon of the product is equal to one teaspoon of sugar. Maltodextrin is also a preservative that increases the shelf life of packaged foods. It’s inexpensive and easy to produce, so it’s useful for thickening products like instant pudding and gelatins, sauces, and salad dressings. It can also be combined with artificial sweeteners to sweeten products like canned fruits, desserts, and powdered drinks (as done in Stevia in the Raw). It’s even used as a thickener in personal care items like lotion and hair care products. Maltodextrin has 4 calories per gram — the same amount as sucrose, or table sugar. Like sugar, your body can digest maltodextrin quickly, so it’s useful if you need a quick boost of calories and energy. However, MALTODEXTRIN’S GLYCEMIC INDEX IS HIGHER THAN TABLE SUGAR, ranging from 106 to 136. This means that it can raise your blood sugar level very quickly. This is why it is an absolute NO GO on a low carb, keto, ketogenic or banting lifestyle or diet. It is WORSE than sugar in terms of its insulagenic effect on your body (i.e. how much insulin your body will create after eating a particular food)! Today I'm going to answer the question, is stevia good for diabetes. It is now being grown in many other countries with China now being the largest export of the sweetener derived from the plant. The plant is in the same family as chrysanthemums and sunflowers. The extract taken from the stevia plant has been used for many years as a sweetener, but was actually banned in the United States in 1991 because it was thought to cause cancer. The ban was lifted in 1995, but the Food and Drug Administration (FDA) allowed stevia to be imported and sold as a food supplement, but not as a sweetener. In December 2008, the FDA declared stevia Generally Regarded As Safe. Since then the market has been flooded with “stevia” sugar substitutes. Just some of the “brand” names of stevia are: Stevia in the Raw Truvia PureVia Sweet Leaf WalMart has their own “brand” Great Value Stevia Only Sweet And there are plenty of “Generic” stevia based sweeteners available. Stevia extract is 250-300 times sweeter than table sugar. Stevia is generally accepted as a good sugar substitute. A 2003 study by Søren Gregersen found that stevioside reduces postprandial blood glucose levels in type 2 diabetic patients, indicating beneficial effects on the glucose metabolism. Stevioside may be advantageous in the treatment of type 2 diabetes. Postbrandial simply means the blood glucose levels after eating a meal. A 2012 study by Naveen Shivanna found that the active ingredients in stevia not only had a positive impact on blood glucose levels, but was found to be an anti-oxidant and had liver protection properties. So, is stevia good for diabetes? My answer is yes. But I do feel you need to read the labels before you buy. Some forms of stevia sold in the US is all natural, but is it all stevia? Others have additives in them to promote longer shelf life. Be sure to read the label to ensure you are getting an all-natural, all stevia sweetener. I didn't have granulated erythritol like the recipe asked for, so I used generic sucralose (Splenda). Unfortunately, it didn't come even close to the right consistency, but it's kinda funny watching me fail. :) I certainly do not blame the lady who developed the recipe, because I didn't use the ingredients she specified. I'll try again when I have some granulated erythritol, which I think will stand up better than the powdery sucralose I was using. Sucralose is an artificial sweetener. The majority of ingested sucralose is not broken down by the body, so it is noncaloric. In the European Union, it is also known under the E number (additive code) E955. Sucralose is approximately 320 to 1,000 times as sweet as sucrose (table sugar), twice as sweet as saccharin, and three times as sweet as aspartame. It is stable under heat and over a broad range of pH conditions. Therefore, it can be used in baking or in products that require a longer shelf life. The commercial success of sucralose-based products stems from its favorable comparison to other low-calorie sweeteners in terms of taste, stability, and safety. "Phooey on all this health business! Ugh. Low-calorie this and boring that. Food is good!" Well, here's some good news to spur you on to success. Try some of these imaginative smoothie recipes, good for breakfast, lunch or even a midnight snack. Be the one who keeps your resolution for a healthier you! All you need is a blender. Breakfast smoothie recipes start you off deliciously and nutritiously. We all know fruit and yogurt are healthy, but can be a bit dull first thing in the morning, whereas the smoothie is an entirely different experience. With the looks of a milkshake and a sensational and refreshing fruit taste, you've got a breakfast worth drinking! It's full of vitamins, fills you up, is quick to fix and is low in calories. Almost any fruit goes well in smoothie recipes, regardless of the time of day. Oranges, kiwi fruit, papayas, peaches, pears, pineapple, strawberries, raspberries and banana are all excellent for the fruit component. You can mix several fruits in the same smoothie recipe. If your favorite fruit is not in season, use a package of frozen fruit with its syrup. The syrup adds a few calories, but look at it this way. It's a complete meal. You won't be hungry until lunch. The nutritional value far outweighs the extra calorie count. Alternatively, use the new fruits that come in jars with Splenda( as the sweetener in the juice. Fruit juices add flavor and can help thicken the drink, depending on the juice. Survey the juice aisle at the grocery and load up your cart. Flavored yogurts and ones with real fruit at the bottom add even more flavor and substance. Pina colada yogurt goes great with tropical fruits. Smoothie recipes allow you to adhere to your dietary restrictions too. For example, if you're lactose intolerant, you can substitute soy milk or use a 2% fat acidophilus milk. Soy milk is a powerhouse of nutrients and comes in several flavors as well as an unsweetened form. Now for some special flavor additions. A tablespoon or two of Torani( syrup in a flavor complimentary to your smoothie recipe ingredients can make a great smoothie magnificent. Toss in some shredded coconut or tahini paste for an exotic taste treat. A small scoop of quality ice cream never hurts. Having just one smoothie each day can fulfill many of your New Year's resolution objectives. These generic smoothie recipes guarantee better nutrition, more energy and a trimmer you! One would be surprised by what a box of frozen chicken and waffles under Walmart's Great Value private-label brand signifies for the world's largest retailer. Ditto a half pizza, half quesadilla product playfully called a 'Pizzadilla' that takes about 22 minutes to heat up in an oven. The rather eclectic new frozen foods offer a small snapshot into what's likely to be a major private-label product push by Walmart this year across all of its store concepts. The push is so great the company decided to open its first-ever culinary innovation center in its Arkansas backyard as a way to incubate new ideas. Private-label products, otherwise known as store brands, are simply products on which stores put their own names or brands. They give retailers a way to set themselves apart from competitors. Consumers know they can buy a national brand such as Pepsi anywhere but they can only buy their favorite store brand at a certain store. Shoppers often love private labels because they tend to be cheaper in price relative to well-known national brands. Retailers love them as they often carry higher profit margins than national brands, which cost more for retailers to buy due to big-name companies such as Pepsi and General Mills passing along their product development and marketing expenditures. According to a Walmart spokesman, private-label products help it offer lower-priced products to economically sensitive consumers. Also, by cutting out the large national brands, the company could move quicker to introduce innovative products. Sales of private-label products have been hot as U.S. consumers continue to count their pennies post-Great Recession, which is likely spurring Walmart's renewed efforts. According to Nielsen, total annual sales of store brands across supermarkets, drugstores and mass merchants rose by $2.2 billion to $118.4 billion last year, an all-time record. In the past two years alone, annual sales of store brands have increased 5%, or $5.4 billion, says Nielsen. TheStreet got its hands on several of Walmart's zaniest new private frozen food creations to see if they stood up in quality and taste to other options for consumers such as cooking at home for the family or a trip to a McDonald's drive-thru.  1 Scoop's Cinnamon Swirl Whey (30g) 1/8 cup Splenda, Truvia, Stevia
 (9-12g) Dash of Cinnamon 8g SF/FF Pudding Mix (used vanilla) Dash of Milk (I use Almond)
 Directions: 
Leave all ingredients out at room temperature; First beat the cream cheese until thick and smooth.
 
Combine all Dry ingredients (Whey, Splenda, SF/FF Pudding, Cinnamon) into cream cheese and beat slowly into mixture.
 
Slowly add in wet (milk, Yogurt, and then add in eggs last one by one and continue to mix on a low setting for a few minutes until blended well.

 Place in a Spring form 6-7" pan (The best for cheesecakes) or use a generic pyrex dish for 30 minutes at 250 degrees, then 50 minutes at 300 until the middle can be picked with a toothpick and come out clean.

This event is part of the ongoing "Teachers on Teaching" series sponsored by Teaching and Learning Services Dr. Corey Ptak is a lecturer in the Thomas H. Gosnell School of Life Science. His primary teaching interests revolve around developing inquiry based, experiential learning techniques for science education using innovative multimedia tools. His research interests focus on environmental remediation of soils in urban areas and science based techniques for sustainable urban development. Active engagement in the classroom has been shown to increase student learning and retention. However, many faculty report that active, student-centered learning environments are difficult to achieve in lecture format classes as a result of the demands on the instructor. This talk will introduce how a text-message-based polling software, Poll Everywhere, has been used to facilitate student-centered learning in lecture format classes. Topics discussed will include using Poll Everywhere to encourage student discussions, coordinate two-way communication between students and faculty, and facilitate debate-style exercises.
