Could be...but as as someone who knew less than he did, I'm not complaining. Now off to a more advanced explanation. One needs to start with something simple to connect the dots. I liked the "arm sticking to your side" example, now I have one more dot to connect to

I've heard that in mammals, many of the negative consequences of AGE are due to the way the body responds to them (cells see them as a sign of wounding or infection and trigger inflammation and other potentially bad things when they're sensed) which makes it hard to tell what problems are due to AGE themselves and what are due to the response. This could be partly overcome by working on non-mammalian systems, but little work seems to have been done in them (we don't know if nematodes have an "immune" response to AGE yet). Never thought of using toast as an example of AGE before.

+unassumption Thats right, that is what happens in the kidneys of diabetics, which destroys the filtration system and they end up on dialysis. They can cause lots of different problems and new mechanisms are being discovered all the time as technology allows scientists to better detect these cross linkings. The toast best exemplifies the tissue stiffening that is caused by AGEs.
